Gluten free recipe for:

Angel Food Cake

Light, and heavenly cake.  Sure to impress your friends.

Ingredients: 1 1/2 cups egg whites
1 1/4 cup powdered sugar
1/2 cup white rice flour
1/4 cup tapioca starch
1/4 cup coconut flour
1 1/2 tsp cream of tartar
1 1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp xanthan gum
1/4 tsp salt
1 cup sugar

1.  Separate eggs and let egg whites stand for 30 minutes
2.  Preheat oven to 350 degrees.
3.  Add cream of tartar, extracts and salt to egg whites.  Beat on high speed.  Gradually add white sugar, beating until sugar is dissolved and stiff peaks form.
4.  In separate bowl mix together powdered sugar, flours, starch and xanthan gum.
5.  Slowly fold flour mixture into egg mixture.
6.  Spoon into 10 inch, ungreased, angel food cake pan.
7.  Remove air pockets.
6.  Bake for 40-45 minutes until cake springs back when lightly touched.  Invert pan and remove cake from pan after it cools.
