Gluten free recipe for:

Candy Cane Brittle

This is a wonderful peppermint brittle.  It adds great taste, color and variety to Christmas baking.

Ingredients:
8-10 large GF candy canes
2 lbs. GF vanilla melting candy pieces

1.  Line a large baking sheet that has small sides with aluminum foil and coat lightly with non-stick GF spray.
2.  Melt candy pieces in the microwave.  This is easily done by warming at medium power for 4-5 minutes, stirring once part way through.
3.  Unwrap candy canes, place in freezer bag and crush into small chunks using a rolling pin (this is a great job for the kids!).
4.  Stir candy cane pieces into melted candy.
5.  Spread evenly in pan and chill for at least 2 hours.
6.  Break brittle into chunks and place on serving tray.
