Gluten free recipe for:

Chocolate Crinkles

Tastey gluten free chocolate cookie coated in powdered sugar.

Ingredients: 2 cups white sugar
1 cup sweetened cocoa powder
3/4 cup vegetable oil
4 eggs
2 tsp vanilla extract
1/2 cup white rice flour
1/2 cup brown rice flour
1/2 cup tapioca starch
1/2 cup cornstarch
2 tsp baking powder
1 tsp xanthan gum
1/2 tsp salt
1/2 cup confectioners' sugar

1.  Mix together cocoa, white sugar, and vegetable oil.  Beat in eggs and vanilla.
2.  In a separate bowl combine flours, starches, xanthan gum, baking powder, and salt.
3.  Mix flour mixture into cocoa mixture.
4.  Cover dough and chill for 4 hours.
5.  Preheat oven to 350 degrees.
6.  Spray cookie sheets.  Roll dough into one inch balls, coat with confectioners’ sugar, and place on cookie sheet.
7.  Bake for about 10 to 12 minutes, cool and enjoy.
