Gluten free recipe for:

Chocolate Mystery Cake

Wonderful taste with a healthy twist.

Ingredients: 1 cup butter, margarine (I use part coconut oil)
1 1/2 cups brown sugar (I use part coconut sugar)
4 oz semi-sweet chocolate
1/2 t. vanilla extract
1 t. baking soda
3 eggs
2 cups pureed cooked beets (thus the "mystery")
2 cups Arrowhead Mills Gluten-Free Pancake and Baking Mix
confectioners sugar

1.  In a large mixing bowl, cream 3/4 cup butter and brown sugar.  Add eggs; mix well. 
2.  Melt chocolate with remaining butter; stir until smooth.  Cool slightly. 
3.  Blend choclate mixture, beets and vanilla into the creamed mixture. 
4.  Combine flour and baking soda; add to the creamed mixture and mix well. 
5.  Pour into two 9” greased, floured cake pans (or the equivalent). 
6.  Bake at 375ยบ for approx 30 minutes or until a toothpick inserted near the center comes out clean. 
7.  Cool in pan for 10 minutes before removing to a wire rack.
8.  Cool completely. Before serving, dust with confectioner’s sugar.
