Gluten free recipe for:

Cornbread Muffins

These cornbread muffins are a great addition to any soup or stew.  Buttery and sweet, these muffins include real corn kernels for texture and taste!

Ingredients:
1/4 cup butter, softened
1/4 cup oil
2/3 cup sugar
1/4 cup honey
2 eggs
1/2 tsp salt
1 cup corn starch
1/2 cup rice flour
3/4 cup cornmeal
1/2 tsp baking powder
1/2 cup milk
3/4 cup frozen corn kernels, thawed
1 1/2 tsp xanthan gum

1.  Preheat oven to 400 degrees.  Grease muffin tins.
2.  Mix together butter, sugar, honey, eggs, milk and salt.
3.  Mix together flour, xanthan gum, corn meal and baking powder.
4.  Add dry ingredients to wet ingredients.
4.  Stir in corn.
5.  Spoon batter into tins, filling each tin 3/4 full.
6.  Bake for 20-25 minutes, or until inserted toothpick comes out clean.
