Gluten free recipe for:

Cranberry Chicken

A simple, wonderful holiday recipe!

Ingredients: 1/2 c. gluten free flour (I used the Namaste Perfect Flour Blend)
1 tsp. salt
1/4 tsp. pepper
6 boneless chicken breasts
1/4 c. butter
3 c. whole fresh or frozen cranberries
2 c. water
1 1/2 c. brown sugar
2 Tblsp.GF red wine vinegar

Combine flour, salt and pepper. Coat chicken well with flour mixture. Meanwhile, melt the butter in a large skillet. Brown the chicken on both sides over medium heat, then remove the chicken from the skillet. In the skillet, now whisk together the cranberries, water, brown sugar and red wine vinegar. Bring to boil and cook until the cranberries burst, stirring constantly. Once the cranberries burst, return the chicken to the skillet. Cover skillet and continue to simmer approximately 20-30 minutes until chicken is cooked through. If sauce becomes too thick, add a bit more water.
