Gluten free recipe for:

Gluten Free Bread

This is a great sandwich bread that is simple to make in bread maker.

Ingredients:
1 1/2 cups rice flour
1 1/2 cups tapioca flour
2 Tbsp sugar
1 Tbsp xanthan gum
1 Tbsp quick rise yeast
1 tsp salt
1 egg
1 cup milk
1/3 cup water
3 Tbsp vegetable oil
1 tsp vinegar

1.  Warm milk and water to about 110 degrees.
2.  Pour milk and water mixture, egg, oil, and vinegar into bread maker.
3.  Add dry ingredients to bread maker, saving the yeast until last.
4.  Set bread maker for express bake 1.5 lb. or an equivalent setting on your bread maker.  The cycle should last about 1 hour.
5.  Scrape down sides of bread maker after about two minutes of mixing.
6.  When bread is done baking, cool on wire rack.
7.  If your loaf falls, try adding a little less water next time.  Refrigerate loaf once it has cooled, and consume within 2-3 days for optimum freshness.
