Gluten free recipe for:
1/2 cup cornstarch
1/2 cup tapioca starch
1/2 tsp baking powder
1/2 tsp salt
1 egg
3/4 cup milk
1-2 cups oil
powdered sugar
1. Sift together starches, baking powder, and salt.
2. In a medium mixing bowl, stir milk and eggs. Add flour mixture and beat until smooth. The mixture needs to run through a funnel. Add a little more milk or tapioca starch to get mixture to correct consistency (similar to cake batter).
3. While mixing ingredients, heat oil in a small skillet to 360 degrees. Make sure that there is enough oil for batter to barely float (about an inch).
4. Plug the bottom of the funnel and fill with at least 1/2 cup of mixture. Unplug the funnel and move funnel in circular motion close to the oil as the mixture drains out. Heat until golden and flip for one minute. Place the funnel cake on paper towels to cool. Repeat until batter is gone.
5. Sprinkle generously with powdered sugar and enjoy.
