Gluten free recipe for:

Unbelievably delicious gluten free pie. A wonderfully unique crust that is accented by the peaches and pudding. Submitted by: BabesPrep Time: 25 Minutes Cook Time: 3o Minutes |
1/4 cup tapioca flour
1/2 cup cornstarch
1/2 cup sugar
1 Tbsp sugar
1 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
3 oz. package non-instant vanilla pudding
3 Tbsp butter, softened
1 egg
1/2 cup milk
8 oz. package softened cream cheese
29 oz can sliced peaches
3 Tbsp honey or agave nectar
1. Preheat oven to 350 degrees.
2. Grease 9-inch pie pan.
3. Mix cornstarch, tapioca flour, salt, baking powder, and pudding mix in a medium bowl.
4. Mix in butter, egg and milk. Beat for 2 minutes.
5. Pour mixture into pie pan.
6. Arrange peaches over mixture in a circular form.
7. In a small bowl, beat cream cheese until fluffy.
8. Add 1/2 cup sugar and 3 Tbsp honey or agave nectar. Beat for 2 minutes.
9. Spread mixture over peaches leaving a space to the edge of the pan.
10. Sprinkle 1 tsp. cinnamon and 1 Tbsp of sugar over pie.
11. Bake for 30 minutes until golden around the edges and middle is set up.
12. Cool in refrigerator at least 4 hours before serving.
