These melt-in-your-mouth caramels will be a great addition to your gluten free Christmas baking platter. Submitted by: Grandma SherriPrep Time: 10 Minutes Cook Time: 1 Hour |

2 cups sugar
1 cup light corn syrup
1 cup milk
1 cup brown sugar
1 cup whipping cream
1 cup butter
1 1/2 Tbsp GF vanilla
1. Put all ingredients except vanilla into medium pan.
2. Cook over medium heat, stirring constantly, until soft ball stage (234 degrees).
3. Add vanilla and stir well.
4. Pour into buttered 8x8 pan and chill.
5. Cut caramels into small squares and wrap in wax paper. I found the easiest way to do this was to remove 1/4 of the pan of caramels and place on a greased, glass cutting board and cut with a greased knife instead of trying to cut them in the pan and remove them individually.
