Gluten free recipe for:

Marshmallow Brownies

These chocolate marshmallow brownies are a fun and unique twist to the original brownie…almost like smores in a pan!

Ingredients: 4 squares unsweetened chocolate
1/2 cup butter
1/2 cup cornstarch
1/2 cup sorghum flour
1/2 cup tapioca flour
1 tsp xanthan gum
2/3 cup packed brown sugar
2 tsp baking powder
1 tsp salt
1 tsp vanilla
1/2 cup oil
1/2 cup milk
2 eggs
2 cups miniature marshmallows
4 squares chopped white chocolate

1.  Preheat oven to 350 degrees.  Lightly grease a 9X13 inch baking pan.
2.  Melt unsweetened chocolate and butter in a large bowl in the microwave for 2-3 minutes at half power, stirring occasionally until smooth.
3.  In separate bowl, mix the cornstarch, sorghum flour, tapioca flour and xanthan gum thoroughly.  Add the brown sugar, baking powder, salt, vanilla, oil, milk and eggs.  Add cooked chocolate and butter mixture and mix well.
4.  Gently fold in marshmallows and chopped white chocolate.
5.  Spread batter into prepared 9X13 pan and bake approximately 25 minutes.  Be careful not to overcook.
