These little muffins are an enjoyable bite sized treat. They are perfect for Christmas, but enjoyable year round. They are very moist! Submitted by: BeckyPrep Time: 15 minutes Cook Time: 10 Minutes |

1/4 cup coconut flour
1/4 tsp. salt
1/4 tsp. baking soda
1 Tbsp cinnamon
1/4 tsp. ground cloves
3 eggs
1/4 cup honey
1/4 cup oil
1. Preheat oven to 350 degrees
2. In a medium bowl combine dry ingredients.
3. In another bowl, blend eggs, honey, and oil.
4. Combine all ingredients and blend.
5. Grease mini muffin pan. Do not use liners.
6. Put 1 Tbsp. batter in each muffin cup.
7. Bake for 8-10 minutes.
8. Cool and serve. These muffins are wonderful as they are, but you may also wish to add some variety by topping them with cream cheese frosting.
