1 lb. fresh baby carrots or frozen sliced carrots
1/4 cup slivered almonds
1/3 cup orange marmalade
1/2 cup golden raisins
1. In medium pan, bring 1/2 cup water to boil.
2. Add carrots; return to boil. Reduce heat, cover and cook 10-12 minutes or until tender, stirring occasionally.
3. Spread almonds in single layer in nonstick skillet; cook and stir over medium-high heat 4-7 minutes until lightly browned.
4. Drain cooked carrots, stir in marmalade and raisins.
5. Cook over low heat until marmalade is melted, stirring constantly.
6. Add almonds, toss gently and serve.
