Gluten free recipe for:

Pistachio Cake

I ate this cake every year for my birthday growing up.  I am so excited to once again have it gluten free!

Cook Time: 35 minutes

Ingredients: Cake:
1 Namaste vanilla cake mix
3.4 ounce package of instant pistachio pudding
3 eggs
1 cup 7 up or Sprite
1 cup cooking oil
1/2 cup chopped nuts (optional)

Frosting:
2 packages dream whip
2 3.4 ounce packages instant pistachio pudding
2 cups of milk

1.  Preheat oven to 350 degrees.
2.  Beat together cake ingredients.
3.  Pour batter into greased 9 by 13 pan.
4.  Bake for 35-40 minutes
5.  Cool cake before frosting.
6.  Beat together frosting ingredients until peaked.
7.  Frost and enjoy
