Gluten free recipe for:

Sugar Cookies

Delicious classic cookie is now gluten free!

Ingredients: 1 3/4 c. marg. (not butter)
1 small box instant vanilla pudding
1 1/2 c. sugar
2 eggs
2 t. vanilla
4 c. featherlight flour mix*
1 3/4 t. xanthan gum
3/4 t. baking powder
1/3 t. salt

1.  Mix marg., pudding and sugar until creamy. Add eggs one at a time; beat well after each egg. Add vanilla.
2.  In separate bowl mix flour mix, xanthan gum, baking powder and salt. Slowly add flour mixture to butter mixture; mix well.
3.  Chill dough at least 1 hour. Roll out with featherlight mix. Dough can be a little sticky, so work some featherlight flour in before rolling out.
4.  Bake on sheets for 11 min. at 350 degree oven. Frost and enjoy!
5.  *Featherlight flour mix: 2 c. rice flour, 2 c. cornstarch, 2c. tapioca flour and 2 T. potato flour (not potato starch flour) Mix and store in container. (this is the mix I used, others might work just as well)
