Ingredients: 4 cups diced sweet potatoes
1/2 cup sugar
2 eggs
1/2 tsp salt
4 Tbsp butter, softened
1/2 cup milk
1/2 tsp vanilla extract
1/2 cup brown sugar
1/3 cup rice flour
3 Tbsp butter
1/2 cup chopped pecans
1. Preheat oven to 325 degrees.
2. Peel and dice sweet potatoes and place them into medium sized pan. Cover with water and boil until soft.
3. Drain sweet potatoes and mash.
4. In a large bowl, mix sweet potatoes, sugar, eggs, salt, softened butter, milk and vanilla. When mixture is smooth, spread it into a greased 9x13 dish.
5. In a small bowl, mix together sugar and rice flour.
6. Cut in butter and stir in pecans.
7. Sprinkle mixture over sweet potatoes.
8. Bake for 30 minutes until top starts to brown.
