My kids love this bread for peanut butter and jelly sandwiches. The touch of cinnamon adds so much to the taste! Submitted by: PatPrep Time: 10 Minutes Cook Time: 1 Hour |
1 1/3 cups water
3 eggs
3 Tbsp canola oil
1 tsp cider vinegar
2 cups white rice flour
2/3 cup corn starch
1/3 cup soy flour
1/2 cup tapioca flour
1 Tbsp xanthan gum
3 Tbsp sugar
1/2 cup dry milk
1 1/2 tsp salt
1 1/2 Tbsp cinnamon
1 Tbsp rapid rise yeast
1. Warm water to about 110 degrees.
2. Pour all wet ingredients, including eggs, into the bread maker.
3. Add dry ingredients to bread maker, saving the yeast until last.
4. Set bread maker for express bake 2 lb. or an equivalent setting on your bread maker. The cycle should last about 1 hour.
5. Scrape down sides of bread maker after about two minutes of mixing.
6. Cool on wire rack.
7. If your loaf falls, try adding a little less water next time. Refrigerate loaf once it cools, and consume within 2-3 days for optimum freshness.
