Gluten free recipe for:

Turkey Enchiladas

A delicious gluten free recipe to use all that leftover turkey for.

Ingredients:
10 corn tortillas
2 cups cubed or shredded cooked turkey
1 medium onion, chopped
1 small green pepper, seeds removed and chopped
3 Tbsp vegetable oil
2 cups shredded cheddar cheese
4 oz can chopped green chilies
Cream Soup Base
1/8 tsp. ground cumin

1. Preheat oven to 350 degrees.
2. Make Cream Soup Base.  Add cumin into soup as it thickens.      Remove from heat.
3.  In separate pan, saute onion and green pepper in oil until tender.
4.  Remove onion and pepper from heat and stir in turkey, one cup cheddar cheese, green chilies, and 1/2 cup cream soup mixture.
5.  Spoon turkey mixture down the center of corn tortillas and roll them tightly.  It helps to heat the tortillas, wrapped in a wet paper towel, in the microwave for 2-3 minutes.  Try to get an equal amount between tortillas.
7.  Place in greased 9x13 pan with the seam down to prevent it from unrolling.
8.  Spoon the remaining soup down the center of tortillas and cover tortillas with the remaining cheese.
9.  Bake uncovered for 25 minutes or until heated through.
